I will never buy shop bought muesli bars again after making these babies!
One of my boys requested some chocolate chip muesli bars after he saw some in a shop and when I read the ingredients I was horrified!! Do they really think it's okay to put that many chemicals and additives in food for children… and as mums do we close our eyes and shove them into our children's mouth because they are hungry, we are late, stressed, exhausted and have nothing else for them.
These bars take less than 5 minutes to make - they keep really well. I have not tried freezing them but I think they would freeze well too.
They are the perfect thing to pacify a hungry child and they are filled with so many nutritive ingredients they are the type of food that satisfies them not leaves them starving 10 minutes later.
I hope you enjoy them - my two loved them and I did too.
Ingredients
- 2 cups of organic oats
- 4-6 medjool dates
- small handful of almonds, raw cashews & sunflower seeds
- 40 grams of organic extra virgin coconut oil (butter would work too)
- 40 grams of raw organic honey
- 2 organic eggs
- 1/2 cup organic sultanas (sulfite free)
- 1/2 tsp of organic vanilla extract (not vanilla essence - that stuff is NASTY!)
- A few shakes of cinnamon
- 8 organic apricots (preservative 220 free)** Optional
- Organic Cocoa Nibs for top
- If your kids like sweeter bars you could add some organic dried apricots (make sure they don't contain preservative 220 - all non organic do) Add some extra dates or organic sultanas for more sweetness.
Directions
- Grind nuts to make a powder
- Add dates and dried fruit and pulse to combine
- Add remaining ingredients and mix well - you want a consistency that looks like a muesli bar so it it looks too chunky pulse again but you don't want a paste!
- Put in lined tin pushing down flat
- Sprinke cocoa nibs on the top and push in
- Roughly cut top with knife in wet mix (this makes it easier to cut properly when cool)
- Cook for 20/30 minutes at 180 degrees celsius until they smell amazing - check after 20 minutes and sometimes worth turning over if underside is not browning… it's also best to take out a little before you think they are ready so they don't get too hard (kind of like anzac biscuits) it's easy to overcook them.
- Cut into bars as they cool and enjoy!
- Store in glass airtight jar in fridge.
