My twin boys are turning 4 in a couple of months so I'm on the hunt for good party food.
These completely remind me of the chocolate crackles that I used to love growing up but these little babies contain nothing but nourishing ingredients and are very yummy and crunchy.
This recipe contains a fair bit of coconut in various forms which is filled with fantastic fats for growing and nourishing healthy brains. They are super simple to make and take less than 5 minutes. These are VERY crumbly. This is normal. They do not contain copha or anything super sticky so sometimes if they are too crumbly use less puffs and more mixture.
Ingredients
- 2 cups or organic multi puffs - I used organic hulled buckwheat, organic sorghum & organic brown rice (you can buy these in health food shops or sometimes sold in coles & woolies in health food section)
- 1/2 cup organic desiccated coconut
- 1/3 cup coconut sugar
- 6 Tbs organic coconut oil
- 2 Tbs organic coconut butter
- 2 tsp organic raw cocao powder (not to be confused with cocoa powder)
- 1 tsp organic vanilla extract (not vanilla essence - that stuff is nasty!!)
Directions
- Line muffin pan with paper cup liners
- Place multi puffs in a bowl
- In a small pan on a low eat gently warm coconut butter, coconut oil and raw cocoa
- Add desiccated coconut and coconut sugar
- Pour over multi puffs mix in well and spoon into liners
- Place in fridge to set
- Eat and enjoy!
