I had my wisdom teeth removed a couple of days ago.  I'm in bed for the second day and loving the rest.

It is one of the first times in 5 years with kids I have had 2 days in bed with no kids around.  As unpleasant as it is to look like a goldfish on steroids I am LOVING this time to recoup totally on my own in quiet.

I am craving something sweet right now having had 2 days on soup. This is what I have just whipped up. It took about 3 minutes to make and it is so yummy.

Delicious, simple, nourishing and hard not to go back for seconds.  You will not believe how delicious this is. No you cannot taste the avocado.  This recipe can be halved if making for one but you will want more. Trust me.

Taste tested by one sugar loving husband and 2 x fussy 4 year olds. All love it (even the one who refuses to eat avocado) Shhhhh.. What avocado??

Ingredients

  •  2 tbs magic seed mix (ground up sunflower seeds, flaxseeds, chia seeds to form fine powder)
  •  2 ripe avocados
  •  1 tbs organic coconut oil
  •  1/4 cup organic raw cacao
  •  1/4 cup maple syrup
  •  1/4 cup organic coconut milk/cream ( If I'm opening a tin I use a bit of both - the cream on the top and the liquid also)
  •  2 tsp organic vanilla extract (can buy from coles or woolies in baking section)

Directions

  1. Mix all ingredients in food processor except coconut cream/milk together until smooth
  2. Gently add coconut cream/milk until mousse consistency.
  3. Test for sweetness - add a little more maple if necessary.
  4. Serve with chopped nuts, seeds, mint leaves, fresh strawberries, fresh fruit, goji berries, coconut or on it's own with a spoon!
  • Can be used as a cake icing too! Just place in fridge after making for 30 minutes then smooth onto cooled cake!
  •  Variations -  mix through some frozen raspberries to make rasberry chocolate mousse.
  • Add some raw cacao nibs for chocolate chip mousse
  • Add a drop of peppermint essence,  peppermint liquid stevia or fresh mint leaves when processing for peppermint chocolate mousse.
