I have a serious lack of pink in my life.

I have twin boys. I have a husband who happens to be male also. I have male cat called Charlie.

I am surrounded by noise, and trucks, sirens and high adrenaline rescues of mountain top diggers and fire emergencies. Then there is soccer, football, mountain bike riding &  wrestling. My house is noisy most of the time. It's action packed and testosterone galore.  My house feels VERY male.

I look around and I see not one splash of pink anywhere. My boys do not own one pink thing. It's such a shame!

I have tried to buy them many things with a touch of the blush but they won't have a bar of it. I have to say it's absolutely genetic and not environmental.

They have never gravitated toward ANYTHING pink. Orange very occasionally but never pink!!

Then today out of the blue there came some music to my ears.

My little boy asked with his best manners "Could you please make me some bright PINK ice-cream please?" Double please and a pink request?? Was I hearing things???!

I thought I mis-heard!!!

PINK??? DID YOU SAY PINK?? WHY YES YES YES!!  I'M SO ON IT!!

I have never created anything so PINK and I loved it!!

And so did he.

Ingredients

  •  1 handful of raw cashews
  •  2 medjool dates
  •  1/4 ripe avocado
  •  2 large ripe frozen bananas
  •  1 tsp vanilla extract
  •  1 + 1/2 cup frozen organic mixed berries ( I use OOB from woolies) or FRESH if you have them and use them frozen! If you want it super pink - stick with just raspberries
  •  1tbs maple syrup

Directions

  1. Blend Cashews & Dates to make a paste
  2. Add the rest of ingredients and mix until forms ice-cream
  3. Make another batch as you will probably not make enough this is so yummy
