Nourish Me After Kinder Golden Cookies

A simple, nourishing and delicious cookie made in less than 5 minutes!

These cookies are the best! I make a batch of these often in the mornings. They make a great morning tea and my boys love them and always ask for them after kinder.  They are simple, nourishing and delicious.  They take less than 5 minutes to make and are a great little home made protein snack.  If you make almond milk this is a great recipe to use over your left over almond pulp.

Ingredients

 100 g (1 cup)  almond meal
 140 g raw unsalted cashews
 30 g organic sunflower seeds
 1 Tsb organic raw cocao powder (not to be confused with cocoa powder - that stuff is nasty!!)
 1/2 cup organic oats
 1 cup organic desiccated coconut
 1/4 cup organic honey ( I love real leatherwood  honey for this recipe - you can buy it at most supermarkets)
 75 g organic unrefined coconut oil
 1/2 tsp aluminium free bicarb soda
 1Tbs water

Directions

Grind all nuts until fine then add oats and coconut and pulse

Warm coconut oil and honey

Mix Bicarb & Water to form a paste then mix into coconut oil and honey mixture

Add both mixtures together until well combined

Place in spoonfuls on lined baking tray. Flatten with fork & bake in oven for 15-20 mind or until golden. Let cool & enjoy!!

EXTRA TIPS 

  1. These taste best when taken out of the oven before they are hard as they firm up as they cool. If you take them out when they are hard you will end up with a very crunchy cookie which is nice also but I prefer them a little softer.
  2. You can up the nutritional profile by adding 1 Tbs Vital Veggie Powder - buy here!
