I've had one of those days where my boys are really ratty from the moment they woke up. One of the first things I check is their protein intake. If I look back at the previous 24 hours chances are they have not eaten enough quality complete protein. Protein intake is so incredibly important with growing children especially between the ages of 2 and 6 -  and a lack of quality protein even over a day can have a huge impact on their emotional state and their nervous systems. This goes for adults too!

My boys are generally great eaters but one thing I have never been able to convince them on is eating eggs. I have no idea why but they won't eat eggs in any capacity - until this recipe came along and they can't get enough of it.

I love this recipe because it is super high protein - makes a perfect breakfast, lunch or dinner and is a sure fire hit with fussy kids.

Ingredients

 2 large ripe bananas
 6 medjool dates
 2tsp organic raw cocao powder (not to be confused with cocoa powder - spelt similarly but very different products!)
 4 organic eggs
 1/4 tspoon vanilla extract
 pinch of salt
 1 cup of full fat coconut milk
 Optional extras - handful of blueberries or one pear chopped up into small pieces.

Directions

Blend bananas and dates well to make a paste

Add remaining ingredients and mix

Bake until golden at 180 degrees for around 35 minutes (my oven takes 45 mins but I have made this in some ovens that only take 25!)
