Nourish Me Beetroot Strawberry Muffins

Beetroot that tastes like chocolate!

 1 cup of roasted beetroot
 3 tbs olive or macadamia oil works too1 cup organic wholegrain spelt flour
 1/2 cup organic raw cacao powder
 3 tbs organic coconut milk or almond milk. Make your own!
 1/2 cup organic maple syrup
 1 ripe banana
 2 tbs organic coconut oil
 1 vanilla bean or 1 tsp organic vanilla extract
 1/2 tsp aluminium free bicarb soda
 1+1/2 cup of chopped strawberries
 5 organic eggs

Roast beetroot until soft and set aside to cool

Once cooled add beetroot to coconut oil, almond/coconut milk, vanilla. banana, maple syrup and eggs and mix in thermomix or food processor until mixture smooth

Add flour, raw cacao, bicarb and 1/2 cup strawberries and blend again

Add remaining strawberries and stir in by hand

Put into lined muffin tin or cake tray and cook for 30 - 40 mins at 180 degrees. Turn out to cool and enjoy!
