They are high in protein, contain lots of nourishing ingredients and are delicious. We made muffins and a small cake out of this recipe and before I could take a decent photo my twins had eaten over half of them!
They are sugar free and can easily be made for lunch boxes or for snacks on the go! Okay ready to get started?? Here is what you need!

Grate zucchini - set aside
Mix dates, sunflower seeds and banana in high speed blender or thermomix until it forms a paste
Add everything else and blend!
Cook in oven for approx 45 - 50 minutes at 180 degrees. Might need less time for muffins. Check they are ready by inserting a skewer and making sure it comes out dry and clean.

I have the fussiest 3 year old and am desperate to get some nutrients into him! I decided to give the muffins and brownie a try and they were both a hit! He has loved both of them!

My 2 year old and I busied ourselves in the kitchen trying out the ‘Chocolate muffins for toddlers’ recipe and I can confirm that they are BRILLIANT and delicious! An ‘I don’t like zucchini, Mummy’ turned into gobbling up two and asking for more! (She wasn’t the only one loving them, hubby even went back for seconds after work too.) I added chia seeds and shredded coconut to ours, and made them into mini muffins (that also freeze wonderfully!) for easy on-the-go snacks during the week. Thanks for the recipe 123 nourish me!
