Simple, Nourishing & Delicious Choc Chip Cookies!

My boys are starting to notice other kids lunch box food.  They want more food out of packets that are filled with rubbish and refined ingredients.

I don't want to deprive them but I refuse. I know the food these kids are eating are not 'treats'.

They do not nourish growing bodies and they compromise immune systems.

I won't do it. It's a dilemma.

I asked them what they see they would like to try that they see?

'Chocolate Chip Cookies' they tell me.

Is that all?? Easy!

Lets make our own!

'But they have to have lots of chocolate chips in them mum'

'Okay - done'

Ingredients

 1 cup organic wholemeal unbleached spelt flour
 1/2 cup pimped up magic seed mix (ground flaxseeds, sunflower seeds, pumpkin & chia seeds pimped up with desiccated coconut and goji berries - all ground to form a fine powder)
 1/3 cup melted organic coconut oil (melted butter would work too!)
 1/2 cup rapadura or coconut sugar
 2 pinches good quality sea salt
 2 tsp organic vanilla extract
 1 -2 organic eggs (If mix is dry add an extra egg)
 3/4 tsp baking powder
 100 g raw cacao nibs

 

Directions

Preheat oven to 160 degrees celcius and line baking tray with paper

Add all dry ingredients to bowl except cacao nibs and combine

Add wet ingredients and combine again

Add cacao nibs and stir in

Make small balls with your hands pressing flat with fork leaving space between as they spread when cooking

Cook for 12- 18 minutes until golden. Different ovens will vary.  You want to take them out while still a little soft as they will harden when they cool. If they are hard when you take them out you have overcooked them

Let cool on cooling rack and store in airtight container for 5 days (if they last!)
