I whipped these up this morning as I had NOTHING in the house for school lunches. They are so easy to make and make the perfect base to a whole range of things.

I sent them to school with my boys with them spread with Nourish Me Chia Jam but would be delicious with Nourish me Roasted Almond Butter if not nut free for school or even with some home made tomato sauce with mozzarella cheese to make a pizza.

Breakfast – left over potato chip wrap!
Breakfast – left over potato chip wrap!

My boys had them for breakfast with some left over roast potato and sweet potato chips this morning!

Garlic – Natural anti biotic and anti viral

Garlic can be tricky to get into kids and is incredible in winter to keep their immune systems strong so a nice way to get some into them. Enjoy.. Alisa 🙂

Ingredients

 1 large sweet potato
 2 tbs Magic Sprinkles
 1 can organic butter beans
 1 small onion
3 cloves garlic (avoid cheap white chinese garlic at all costs as is highly toxic and sprayed with some horrible fungicides.  Australian purple garlic or Spanish garlic is best!)
 3 tbs olive oil
 1/2 tsp organic vanilla extract
1/2 tsp nourish me stock (or salt)
1 tbs butter or cream (optional)
Mix ready for frying

Directions

1

Peel and cut up sweet potato into cubes and place in a pot of boiling water (I actually don't peel as my boys are used to a more gritty mash and I love the taste of the skins but peeling with give you a smoother mash if that is what you are used to) add onion and garlic and boil with lid on until sweet potato tender

2

Second way to make is to roast sweet potato, onion & garlic in the oven on a tray at 180 degrees until soft

3

Remove and drain sweet potato, onion and garlic if boiling and if baking remove from oven

4

Open butter beans, drain all liquid and wash with running water. Make sure they are rinsed well

5

In a pan lighly cook beans in olive oil with stock or salt

6

Put all ingredients in food processor or thermomix and blend until smooth. If too thick add a little cream, butter or some liquid stock.

7

Serve and enjoy!

These make great pizza bases, wraps, dippers for soup or flat bread . You could also add some grated zucchini or even some cheese for a different texture.
